             250g plain flour, sifted

             3 eggs

             For the filling


             Olive oil
             200g portabella mushrooms, quartered
             2 sprigs fresh thyme
             100g baby spinach, washed
             ½ cup (125ml) cream

             Salt and freshly ground black pepper
             ½ log Chevin goats' milk cheese
