             Red velvet cupcakes with lemony buttercream icing


             Makes 16 cupcakes | Preparation time: 15 minutes | Baking time: 18–20 minutes


             What you’ll need:



             Ingredients



             For the cake

             4 eggs

             200g castor sugar
             160g flour
             1 tsp baking powder
             1 tsp baking soda
             1 Tbsp cocoa powder
             A pinch of salt
             1/4 cup cooking oil
             1/2 cup buttermilk

             2 Tbsp red food colouring
             1 tsp vanilla extract


             For the lemony buttercream icing

             150g soft butter
             300g icing sugar
