             Simple lemon tart with almond pastry


             Makes 1 x deep 20cm tart | Preparation time: 20 minutes | Baking time: 40–50
             minutes



             What you’ll need:



             Ingredients



             For the sweet shortcrust pastry

             100g all purpose flour
             40g almond flour
             70g cold butter, cut into cubes

             1 egg yolk
             2 Tbsp icing sugar
             A pinch of salt
             2/3 tsp vanilla extract
             1–2 Tbsp ice cold water (if needed)


             For the filling

             1.5 tins sweetened condensed milk

             1 tsp corn flour
             2 egg yolks plus 1 whole egg
