             Barley, spinach and wild mushroom salad with a vinaigrette

             and creamy dressing

             What you’ll need:




             Ingredients



             For the barley, spinach and wild mushroom salad

             1 cup (250ml) pearl barley
             5 cups (1.25L) cold water (or according to packet instructions)
             Salt

             1 Tbsp (15ml) butter
             Olive oil
             250g mixed wild mushrooms, roughly chopped or torn
             Freshly ground black pepper
             1 Tbsp (15ml) balsamic vinegar
             1 clove garlic, roughly chopped
             100g baby spinach leaves, rinsed
             100g feta cheese

             Freshly picked mint leaves, for garnish
             Freshly picked flat-leaf parsley, for garnish
             Freshly picked basil, for garnish
