             Stir fried pork fillet, cashew and coriander jasmine rice


             Serves 4 | Preparation time: 45 minutes | Cooking time: 30 minutes


             What you’ll need:



             Ingredients



             For the stir fried pork fillet

             50ml canola oil

             1 red chilli, deseeded and finely chopped
             20g/5cm piece of fresh ginger, peeled and finely chopped
             400g pork fillet, cut into strips
             100ml Kechap Manis (an Indonesian soy sauce)
             4 carrots, peeled and thinly sliced
             1 onion, thinly sliced
             4 courgettes, cut into strips
             ¼ red cabbage, shredded

             100g pak choi
             1 small bunch of spring onions, thinly sliced
             2 tsp (10ml) sesame seeds
             Juice of 3 limes
