Jams
JAM SET TEST
Follow these instructions to ensure your jam is always set properly:
Place a clean side plate in the fridge to chill. When the jam looks set, take a teaspoonful and place on the cold plate. Push the outer edge of the jam puddle into the centre with your finger. If the jam wrinkles (even a little), it will set. If it has not set, continue cooking.
STERILISING AND STORING THE JAM
Wash and dry jars and lids. Place them in the oven at 180°C for 10–15 minutes to completely sterilise them. Reduce the heat to below 100°C and keep in the oven until required.
FILLING THE JARS
Ladle hot jam into a clean glass jug for easy and safe pouring into the jars. Hold the ladle over the pot so that any drips will fall back in. Fill the jars to about 1cm below the rim and seal tightly with lids.
