Founder Bill Carney moved to Las Ve- gas from California in 2003, retir- ing from a corporate consulting ca- reer and seeking new challenges.
He opened Café Moda in 2004, and with manager Francis Sadsad, quickly built a positive reputation in the Filipino community as a fun, casual spot of- fering great food and entertainment.
At that time, Café Moda was located on the edge of Chinatown at Jones and Spring Mountain - this location has now become the center of Asian food and late-night entertainment in Las Vegas.

Tony demonstrates preparation of some of Café Moda’s favorite dishes. First, Daing na Bangus is tasty seafood dish, consisting of fried milk sh wherein the sh is marinated in a vinegar mixture and then fried until brown and crispy.
Also, Tony has made our version of Miki Bihon Pancit noodles. A healthy and fresh plate of mixed noodles (rice and egg) combined with mixed proteins (beef, chicken and shrimp) along with mixed vegetables including cabbage, carrots, scallions and assorted spices.
Finally, Tony makes a traditional classic dish of shrimp fried rice. While simple in ingredients, Tony’s expertise in wok cooking al- lows the rice to be fried just enough to provide the right texture.
