01/4 THE PRODUCT
DI’s R&D process took over 3 years and is constantly evolving. Pizza you enjoy today has been
embellished and revamped again and again, while we focus our attention on the best possible
combination between hand-made quality to production based result.
DI’s pizza is made of 100% natural ingredients:
• Unique blend of semolina and high protein “00” double zero flours
• Italian Extra Virgin Olive Oil from Emilia Romagna
• 100% Mozzarella Fiore di Latte
• Pulpa tomato based sauce
• 3 important Nos: no additives, no sugar, no baking enhancers
The Production Process
• 24 hour natural rising with 70% BIGA
• Hand STRETCHING
• Dusting with SEMOLINA FLOUR
• Partially baked in a wood fired oven
• Shock-frozen at -45° C (-56.2°F) for an 18 month shelf life
• Individually-branded flow pack with window
• Available in 2 sizes: 9” personal and 12” double which serves 2
