                       He  sells  each  tray  before  he  starts  to  fry  the  next  pan.

                       He  wants  his  customers  to  eat  hot  and  fresh  ones.  It  is  his
                       technique.  They  have  a  long  wait,  but  they  are  willing.
                       They  never  complain.
