                   Food Safety: Types of Contamination






           1. Biological Contaminants
                                                                                           Biological
                      • Bacteria:
                           • Bacterial hazards are those bacteria that
                             may cause illness in people. They can
                             cause disease, or produce toxins that
                             make us ill.


                      • Viruses:                                                          Biological
                           • Viruses can also cause disease. A virus
                             does not need water, food or air to
                             survive. Contamination is usually due to
                             poor hygiene practices.







           2. Chemical Contaminants
                                                                                            Chemical
                      • Cleaning & Sanitizing chemicals
                      • Allergens
                      • Toxins from bacteria or which are otherwise
                         an existing component of a raw material.

                      • Other chemicals





           3. Physical Contaminants
                                                                                            Physical
                      • Metal, Glass or other foreign materials
                      •Pests
                      • Hair, Fibers
