Product knowledge is important for customer confidence, as well as for maintaining expectations and reducing unnecessary returns and food waste.
TURKEY STOCK WITH FERMENTED BEET JUICE
+ Differences in color. We ferment 3 types of organic beets: golden, white, and red. The amount of each beet varies per batch based upon availability which will vary the color of products.
DETAILED NIBBLES AND PATTIES
+ It’s not “freezer burn”! The look of natural freeze drying or flash freezing may include white ice instead of clear crystals, and this is often confused with “freezer burn”. Each food freezes differently based on things like the amount of water, muscle tissue or air exposure. Patties and nibbles have slightly more air exposure than our carton forms. This is what can also form the tougher exterior on some of the nibbles and patties themselves. Our technique of flash freezing preserves more of the nutrients and the lactic acid bacteria from fermentation protect the fats from oxidizing.
+ Color variation on the outer edges, variation from batch to batch,
are normal. We produce whole fermented foods in small batches that don’t contain any preservatives. We use authentic unprocessed foods, whole cuts of meat and ferment our foods— the look, texture, smell, will differ from batch to batch.
