Scrambled Egg, Black Bean,
and Avocado

Breakfast Burritos
Breakfast burritos are convenient, hearty, and nutritious. They
include protein from the eggs and beans, heart-healthy fat from the
avocado, and fiber from the tortilla. They’re perfect for a weekend
meal or as take-along provisions during the week.
Ingredient Tip: Fresh salsa is an awesome condiment to buy
prepared. Just be careful of added sugar lurking in the ingredients
list. You should only find ingredients like tomatoes, cilantro, lime
juice, and peppers.
1 tablespoon avocado oil 4 (100%) whole-grain
1 cup chopped red onion tortillas, warmed
1 (15-ounce) can black beans, 1 avocado, diced
drained and rinsed ½ cup Fresh Salsa (page 297)
6 eggs ½ cup shredded white
½ teaspoon salt Cheddar cheese
½ teaspoon freshly ground ¼ cup chopped fresh cilantro

1. In a large nonstick skillet, heat the avocado oil over medium
heat. Add the onion and cook for 5 minutes or until tender. Add
the black beans and cook until warmed through, about 2 minutes.
Remove the mixture from the skillet and keep warm.
2. In a medium bowl, whisk together the eggs, salt, and pepper.
Add the eggs to the skillet, scrambling to cook through.
3. Spoon the onion mixture down the center of each tortilla,
followed by the scrambled eggs. Top the eggs with avocado,
salsa, cheese, and cilantro. Roll up and serve warm.
Serves 4. Prep time: 10 minutes. Cooking time: 10 minutes. Total time: 20 minutes.
