Vegetable Fritters
Ingredients:
1 tsp of turmeric powder 1 tsp cumin powder
1/2 tsp fenugreek powder Pinch of hing
1 cup of zucchini grated
1 cup of kale
2 tbsp fresh coriander 4 tbsp chickpea flour 1 tbsp safflower oil
Directions:
Cover kale with water & cook for 15 minutes
then add the remainder of vegetables. Cook until soft & water evaporated. Heat 1 tsp ghee saute spices & salt. Stir in vegetables. Mix in 2 tbsp chickpea flour. Make small round fritters, then use remainder of chickpea flour to lightly cover fritters.
Heat oil in a non-stick pan and fry fritters for approximately 5 minutes ( until golden)
Serve with your favourite relish or chutney
