      Fluffy Pancakes
Directions: Stir milk and vinegar together in a bowl; set aside to 'sour' for about 5 minutes.
Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Whisk egg and butter into sour milk. Pour flour mixture into milk mixture and whisk until batter is smooth. Add cinnamon and vanilla extract to batter; mix well.
Heat a large skillet over medium heat and coat with cooking spray. Drop batter, 1/4 cup per pancake, onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with re- maining batter.
Steak And Eggs Hash
Direction: Add potatoes to a medium saucepan and cover with water. Bring to boil and simmer until just tender, about 10-15 minutes.
Heat oil in a large skillet over medium-high heat. Season steak all over with salt and pepper. Add to the skillet and cook until reach desired doneness, about 4-6 minutes per side for medium-rare. Remove steak from the skillet to let it rest.
Meanwhile, add onion and bell peppers to the skillet and cook over medium heat until beginning to soften, about 5 minutes. Add potatoes and paprika, then season with salt and pepper to taste. Cook until the potatoes become even more tender and start to crisp up. Chop steak into 1” cubes and stir the meat into the potatoes.
Using a wooden spoon, make four holes in the hash to reveal bottom of skillet. Crack an egg into each hole and season each egg with salt and pepper. Cover the skillet with a lid and cook until eggs are cooked to your liking, about 5 minutes for a just runny egg. Serve warm.
Bacon Egg -In -A- Heart
Nothing says "love you dad" like bacon.
Direction: Preheat oven to 400 degrees F.
Cut each strip of bacon into 5” pieces then fold in half lengthwise. Take two folded strips and shape them into a heart. Place on a baking sheet and bake until crispy, about 12-15 minutes. Place each crispy bacon heart over the bread and cut out a heart shape from the bread.
Melt butter in a large ovenproof skillet over medium heat. Add the bread and toast until golden on one side. Flip the bread and add bacon hearts to the center of each piece of bread.
Crack eggs into the centers of the bacon hearts. Sprinkle eggs with salt and pepper. Transfer skillet to oven and cook until egg whites are set, about 5 minutes.

2 russet potatoes, chopped in 1” pieces
1 tbsp. vegetable oil
1 lb. New York Strip Steak kosher salt
Freshly ground black pepper
1 tsp. smoked paprika
1 onion, chopped
2 bell peppers, chopped 4 eggs
