Watermelon Cheese Salad


                                               Refreshing summer salad of watermelon and feta
                                                            cheese. Something cool and unusual!

             INGREDIENTS                               DIRECTIONS
             ½ cup light olive oil                     Whisk olive oil, vinegar, salt, and pepper
             ¼ cup white balsamic vinegar              together in a bowl until smooth.
             Salt and ground black pepper to taste     Mix watermelon, onion, and mint leaves
             5 pounds watermelon, cut into bite-       together in a separate bowl. Drizzle
             size cubes                                dressing over watermelon mixture and add
              1 small sweet onion (such as Vidalia     feta cheese; toss well.
             or red onion), thinly sliced
             2 tablespoons chopped fresh mint
             leaves, or more to taste (optional)
             6 ounces crumbled feta cheese
