                          Succulent Minute Steak

                          Roast in Vegetable Sauce

           INGREDIENTS                           DIRECTIONS
           Succulent Minute Steak Roast          Prepare the Succulent Minute Steak
           in Vegetable Sauce                    Roast in Vegetable Sauce
           3 tablespoons oil                     Heat oil in large pot; add onion and sauté
                                                 until golden.
           1 large Spanish onion, diced
           1 stalk celery, diced                 Add celery and carrots and sauté until
           2 large carrots, peeled and sliced    soft. Add roast to pot and brown on each
                                                 side.
           3- to 4-pound minute roast
           1 teaspoon salt                       Mix together wine, ketchup, salt and
           1/8 teaspoon black pepper             pepper. Add to the pot.
           3/4 cup sweet red wine                Cover pot and cook over low heat until
           1 and 1/2 tablespoons Ketchup         meat is fork-tender (approximately two
                                                 hours).
           1 onion, sliced into rings
           1 (8-ounce) can mushrooms             Add sliced onions, mushrooms, and
           1 tablespoon Cornstarch, mixed        cornstarch mixture. Boil until gravy
                                                 thickens. Allow roast to cool before
           with 3/4 cup cold water               slicing.
