Carefully unroll the pie dough onto a floured sheet of parchment.
Dust the crust with flour and place a second sheet of parchment on
top of the crust. The crust is likely to crack while unrolling it, but will
crumble less horribly if it is at room temperature. Don’t worry about
the cracks, use a rolling pin to smooth out the crevices and guide the
