the foil accordion-style until it is 16 by 2 inches. Place this foil as
if building a wall, making another edge, essentially forming a 9-
by 13- inch space for the slab pie. Place the foil on edge, across
the baking sheet, and fold the ends back so the folded piece fits
snugly across the 13-inch centerpoint. Use painter’s tape or
masking tape to secure the foil to the pan’s sides, then fit the
bottom crust into half the pan. Form and bake the pie as
instructed in the recipe. Remove the foil only after the pie has
completely cooled or when serving, whichever comes first.
