Once cool, one at a time, lift the peach from the cold water
and, using the X to get a handhold, peel the skin off in large
swaths; if it does not peel easily, leave the next batch in the
boiling water a little longer. A light touch with a paring knife or a
vegetable peeler will remove any stubborn bits.
