Pie dough is lofty and flaky and that’s a good thing until it is
baked without a filling, because the crust will rise up and blister
in the oven. Before blind baking, dock, or pierce the crust with a
fork or a docking tool, to tamp down that tendency, then crimp
the edge of the crust decoratively and refrigerate for at least 20
minutes.
