BANANA PUDDING CUPCAKES

If my family was asked to select the most comforting cupcake from this book, it
would be these. The batter is filled with fresh banana, and the finished cupcakes
have a vanilla pudding center and whipped cream and crushed vanilla wafers on
top. You can eat them right from your hands, but we prefer to place them on
small plates and eat them with a spoon, as you would banana pudding.

24 paper liners for cupcake pans (2½-inch size)
36 vanilla wafers
3 medium-size ripe bananas
1 package (18.25 ounces) plain yellow cake mix
½ cup vegetable oil
¼ cup milk
3 large eggs
1 teaspoon pure vanilla extract
FILLING:
2 cups milk
1 package (3 ounces) cook and serve vanilla pudding mix
3 tablespoons butter
1 teaspoon pure vanilla extract
