If it’s fat that keeps you from baking cupcakes, here are some ideas for
keeping them healthy.
1. Fruit purees. Substitute applesauce or pureed prunes or pumpkin or
mashed banana for the oil in the recipe. (You can buy prune puree in the
healthy/diet section of the supermarket. Do not use baby food.)
2. Substitute reduced-fat sour cream and cream cheese for full-fat versions.
Do not substitute the fat-free versions.
3. Forgo the frosting. The cupcakes are all tasty on their own.
4. Eat less. Fill a cupcake with ¼ cup batter, bake these smaller cakes for
only 15 to 20 minutes, freeze the extras, and share with your friends.
