INSTRUCTIONS
1 Mix together all the seasoning ingredients in a small bowl.
2 To make the kebabs, sprinkle each slice of bacon with
approximately ⅛ teaspoon seasoning per side, rubbing gently to
adhere. Set aside.
3 Cut steak and bell peppers into 1½-inch pieces and add to a
medium-size bowl. Cut onion in half width-wise and separate layers
into pieces. Add these to the bowl along with the olive oil. Toss to
combine. Sprinkle in half remaining seasoning and stir until well
combined. Add remaining seasoning and stir.
4 To assemble the kebabs, take one skewer and push a piece of
green pepper about 1 inch down onto the skewer. Next, push the
end of a strip of bacon onto the skewer. Add an onion, a red pepper,
and a second onion. Push everything down 1 inch farther on the
skewer and fold the bacon over the top of the second onion. Skewer
that part of the bacon into place. Add a piece of steak and skewer
another fold of bacon over that as well. Repeat the process until you
have used 4 peppers, 4 onions, and 2 steak cubes. The bacon
should be threaded through the other ingredients in a wave pattern.
Use this same process to assemble the 5 remaining kebabs.
5 Cook on a hot grill pan for 2 minutes on the wide sides and 1
minute on the narrow sides.
