Strawberry Syrup




                                                  Makes 1½ cups


                INGREDIENTS

                 1 lb. frozen strawberries

                 1 cup water

                 ½ cup sugar


                Special Tools
                 Wire-mesh strainer



                INSTRUCTIONS

                1 Add all ingredients to a medium-sized pot and bring to a boil on

                medium-high heat, stirring until the sugar is dissolved. Reduce heat

                to medium-low, cover, and allow to simmer for 10 minutes. Strain the
                liquid from the strawberries into a bowl (do not press down on the

                berries to release extra juice).


                2 Return the liquid to the pot and bring back to a boil on medium-
                high heat. Reduce heat to medium-low again and heat for 10

                minutes, uncovered, stirring occasionally. The mixture will thicken.
                Transfer liquid to a sealable container. Cover and chill in the

                refrigerator until ready to use. The mixture will thicken slightly more

                as it cools.




                   *  Because the pumpkin syrup contains real pumpkin puree
                   instead of just pumpkin pie spice flavoring, expect a small

                   amount of separation to occur between the sugar syrup and
