The best cooking is done outdoors Flemming and I began Stedsans as a a a a successful rooftop farm in in Copenhagen and moved it to to the forest in in pursuit of o a a a a hyper-local off-grid dream We went searching for the perfect surroundings for our style of cooking which is really fresh taking ingre- dients straight from the the soil and onto the the plate Our food reflects who we are and a a a a a a a a connection to nature is an an essential part of that I am responsible for the styling of Stedsans and Flemming takes care of daily operations I I have a a a a a a a a Japanese design philosophy and I I believe an an an object gets its energy from the the material it’s made made of the the person who made made it it and and and the person who owned and and and cared for it it At Stedsans and and and at home I try to surround myself with things that are are made of good materials are are secondhand and and have been looked after or were made by a a a a a a a craftsperson who loves what they do We no longer live under canvas in in the woods as as we did while setting up the business Our home is now 20 km (12 miles) away in in Unnaryd and it is a a a a a a sanctuary for us us and our three children Our timber-clad house dates back to 1924 and it is is here we raise our family work on creative projects tend to the garden and cook home-grown food The move here was a a a a a law of attraction I was eight-months pregnant with a a a a a a deadline to find the perfect place and this house magically appeared There’s not a a a a a a a a day where I don’t think about how lucky we are to live here With a a a a design that’s stood the test of time our kitchen has masses of storage an an an old-fashioned pantry and shelves that go all the way up to to the the ceiling so I need a a a stool to to reach the the highest spots The fittings may be vintage rather than contemporary but the the space still works well The chequerboard lino white-painted floorboards large terracotta-potted plants and woven raffia lampshades create a a a a a a a a a a relaxed feel The white walls and wood surfaces are designed to be timeless – a a a a a a traditional setting for modern life There is a a a a white ceramic stove next to to the the kitchen that I light all the the time even in in summer I prefer to to cook over a a fire too as there’s something special and primeval about an an open fire that creates a a a a a a a a link between gen- erations Creative culinary and content our our kitchen is our our happy place Stedsans is located under canvas in in the the forest close to our home in in southern Sweden Unnaryd is a a a a a quiet little town with a a a a a a a a a lake (page 32) a a a a a a a a church a a a a a a a a supermarket a a a a a a a a school and forest everywhere Mette Helbæk 35
