 Embrace the heat. Dress cool. Protect your skin and eyes. Hydrate. Fire up the grill!
If you’re competing in some of the scores of low and slow or hot and fast barbecue competitions this month, your team has its own drill. Go for it and do your best. Good luck!
Summertime take-it-easy mode at home, at a neigh- borhood block party or in a park where live fire cooking is allowed, hot and fast grilling is easier, cheaper and less hassle. Of course, when time allows, you won’t hear complaints if you go slow and low with ribs, brisket or pulled pork. You’ll find some great ideas for summertime cooking in this edition of the Barbecue News. Try some that stretch your skills and add to your deliciousness repertoire.
Here's a few easy, tried- and-true
favorites:
Burgers
Beef
80/20 lean/fat ground chuck charcoal grilled 1/4 pound patties, buttered toasted bun, Duke’s Mayo, thin slice of sweet Vidalia or Texas onion.
Pork
Charcoal grilled 1/4 pound ground pork patties, buttered toasted bun, KC Masterpiece Original.
Turkey
Charcoal grilled ground turkey burgers, buttered toasted bun, with your favorite South Carolina-style mustard base barbecue sauce.
Brats
With bratwurst prices ranging from less than a dollar each to $3.00 or more, you’d expect that the higher the price the better the quality. Not always so. Searching for the perfect brat is an endless but rewarding pursuit. When you find the ones you like best, stick with that brand or source until/un- less you find better.
Hot Dogs
There are good hot dogs and there are better hot dogs. I have yet to eat a hot dog— blackened, boiled, broiled, fried, microwaved, roasted or grilled—that I didn’t like. Gas sta- tion hot dogs are good. New York street vendor hot dogs are heavenly. Costco, Nathan’s Famous, Hebrew National, ballpark, circus, deli—I love ‘em all, but all-beef homestyle grilled, hot and juicy with a kiss of smoke, topped with
