that sets your dish apart from the rest of the field.
Stan: Tell us about your dishes. What categories did you win and what set them apart”?
Max: We were quite humbled to take home three first place category wins. We won in the “Hot Tomato” category which was a showcase of comfort food. Our submission was a Rustic Ratatouille showcasing Chinese Eggplant and Genoa Salami. The next category was “Thankful Sides” in which we sub- mitted a Smoked and Roasted Brus- sel Sprout & Squash Pumpkin Bowl. That dish was smoked on the grill
and served inside of pumpkins. The final win came in “Presentation is Everything” and we plated up a gor- geous Chicken Verde Tamale show- casing a multitude of flavors through an array of colors and tex- tures.
Stan: “What’s next for you in Food Sport, any plans for 2021 competi- tions”?
Max: We are hoping to see more live fire competitions return in 2021 and keep chasing those top spots. KCBS, SCA, Culinary Fight Club and World Food Championships are all on the calendar and we can’t wait to throw our hat in the ring every time!
 Bring’n Home the Bacon
This year, due to the COVID-19, our Bring’n Home the Bacon contest moved from June to October 16-18, 2020. Our goal was to help teams gather points for the KCBS Na- tionals, Wisconsin Team of the Year (TOY), and Minnesota TOY. We expanded Bring’n Home the Bacon this year by adding a double Steak Cookoff Association (SCA) on Friday which drew 44 cooks for turn-in A and 33 cooks for turn-in B. Our KCBS Backyard Competition had 26 teams. The KCBS Master Series/Day 1 on Saturday had 40 teams, and KCBS Master Series/Day 2 on Sunday had 33 teams. We had teams from 10 different states - TX, KS, AL, NE, TN, ND, SD, MN, IA, and WI - come to the beautiful Neshonoc Lakeside Camp/Resort in West Salem WI.
Since our contest is typically held in June of each year, teams at this year’s contest saw different challenges with the weather. In typical Midwest fashion, teams experienced rain, sleet, snow, sunshine, clouds, and wind gusts to 35 mph. And that was all on Friday afternoon as teams rolled into the contest! This time of year, the sun sets early, so the SCA teams had to cook in the darkness for the second turn- in. Teams were hunting for lights, heaters, and more layers of clothing as the sun sank below the horizon Friday night. The cold temperatures and wind also made for some addi- tional challenges during the steak prep and cook. Overnight Friday saw temps around freezing, 32 degrees, that night. Teams that had planned on camping in tents and trucks were hunting for shelter in other teams’ trailers that had the heat turned on. Saturday and Sunday, thank- fully, had less rain and snow, as the KCBS teams cooked and

turned in for their contests. With the cold temps, there wasn’t much of a need for the pool at this year’s event!
The Double SCA Competition drew 44 participants compet- ing for $2600 in turn-in A and 33 participants competing for another $2600 in turn-in B. Each of the SCA partici- pants received beautiful ribeye steaks from the Onalaska Sam’s Club, who generously sponsored the SCA Competi- tion. Congratulations to Brad Duckert for taking 1st place in turn-in A, 2nd – Steve Arp, 3rd – Sandy Brown, 4th – Rusty Hadacek, 5th - Jay Kassera, 6th – Andy Poterucha, 7th – Jeff Jacobsen, 8th – Paul Perpich, 9th – Mark Noordsy, and 10th – Sarah Walker.
