Beef Standing Rib Eye Roast, For The Holiday

It’s that time of year, the holidays! I wish everybody a very Merry Christmas and a Prosperous New Year may your barbecue fires burn hot and true.
A great dish for Christmas and New Years is Prime Rib or more accurately A Standing Rib roast, bone in or boneless which would be a lip-on rib roast. Either of these recipes can be cooked in your smoker or in your oven. Your timetable will be different in a 250o degree F smoker.
Ingredients:
4 pound beef rib eye roast, well-trimmed 2 cloves garlic, pressed
1 tablespoon kosher salt
1 tablespoon coarse ground black pepper 1 tablespoon rosemary, dried, crushed
Sauce:
Ingredients:
12 ounces brown beef gravy
1/4 cup currant jelly
1 1/2 teaspoon dry mustard, dissolved in 1 tablespoon water
Directions:
Heat oven to 350° degrees F. Combine garlic, salt, pepper & rosemary; press evenly into roast. Place on rack in shallow roasting pan. Insert meat thermometer so bulb is centered in thickest part, not resting in fat. Do not add water or cover. Roast the meat approximately 18-22min- utes per pound for medium-rare to medium doneness. Remove roast when meat thermometer registers 140°F for medium-rare, 155°F for medium. Let stand 15 min- utes (Temperature will continue to rise to 145° degrees F for medium-rare 160° degrees F for medium.
Meanwhile in small saucepan, combine sauce ingredi-
ents; cook over medium heat 5 minutes or until bubbly, stirring occasionally. Carve roast into slices; serve with sauce.
Smoked Prime Rib Roast
Lip-on-Rib-Eye
1 lip-on Rib-Eye (9 to 12 pounds)
1/2 cup Balsamic Vinegar
1 to 2 tablespoons kosher salt
1 tablespoon dried chopped garlic
1 tablespoon coarse or cracked black pepper 1 tablespoon dried rosemary, crushed
Directions:
Rub the roast all over with the balsamic vinegar and sea- son with each of the seasonings to taste. Smoke at 230o degrees F to 250o degrees F for about 4 hours or until it reaches an internal temperature of 140o degrees F for medium rare or longer if desired.
