Seasonings
  Salt is essential. It amplifies flavor without altering it and en- hances the meat’s ability to hold moisture. Other seasonings, usually a spice rub, embed into the meat’s surface and enhance it, without overwhelming it. In most common rib rubs black pepper, paprika, brown sugar, garlic powder, and onion pow- der are the other big players.
