- Instant read thermometers! There are multiple brands from simple to use to more advance options - but "instant read" is the key
- For the guy that likes to cook overnight, a PID controller. It is a controller that adjusts and adapts to variances in the set temperature and the desired temperature of the smoker. Most have a pit temp probe and meat probes. There are multiple brands out there to research and all do
the same job, our particular groups fan favorite was Flame Boss.
Other items that were mentioned - white cotton gloves (they are a life-saver under the food safe gloves), a good set of knives - these can be purchased one at at time until you've got a great set, and a really good pair of food shears...
