 Honey and soy salmon with a base of spinach
Ingredients:
● 4 pieces of salmon
● 2tbsp Soy Sauce
● 11⁄2 tbsp honey
● 1tbsp sweet chilli sauce
● 1tsp ground cinnamon
● 1⁄2 tsp garlic powder
● 8 medium bay leaves
● 500g spinach (i used frozen
but fresh spinach can also be
used
● 250ml double cream
● Salt and pepper
Method:
1. Pre-Heat your oven to 180 celsius
2. In a bowl mix the soy, honey,sweet chilli,cinnamon and garlic powder make sure to mix
well
3. Grab Tin foil and cut out squares big enough to be able to place the salmon and wrap it
over
4. Place one piece of salmon in each square and with a brush brush the soy mixture over it,
do not add all of it yet
5. Place 2 bay leaves on top and then pour remaining mix evenly over the salmon
6. Close the tinfoil properly and bake for 15 minutes,checking at ten minutes, if it’s not
cooked at 15 minutes leave a little bit longer untill cooked well
7. While the salmon is baking, grab a separate pan and drizzle some olive oil into it and put
it at medium heat, place spinach and let them cook down a little bit, the size of the
spinach will decrease
8. Pour the double cream into it and leave to cook at low until the spinach and cream has
thickened, add salt and pepper to taste
9. To plate place the spinach on the bottom and lay the salmon on top, then pour the sauce
over the dish, Enjoy
