 Breadcrumb crusted salmon served with pesto
Ingredients:
1. Salmon fillet
2. Pesto
3. Breadcrumbs
4. Peppers
5. Onions
6. Parsnip
7. Garlic
8. potatoes
Method :
1. Spread the pesto over the salmon fillet
2. Sprinkle with breadcrumbs
3. Cook in the oven covered for approximately 20
mins
4. Wash and cut vegetables
5. Sprinkle with olive oil, parsley and thyme
6. Cook in the oven for about 30 minutes
7. Boil potatoes
8. Once soft, pour in milk and mash to a creamy consistency
9. Serve hot with tartar sauce
