Total quantity of my production globally and in India is measured by United States Department of Agriculture and Government of India. According to their report in the year 2018-19 (to present), the estimated global production of is about 42.5 million ton and India produced about 10.3 million tons.
Host:It surprised me! such a large quantity?! Rice bran: Yes. I take pride in saying that. But at the same time, it makes me sad too.
Host: Sad? Why?
Rice bran: Because, though I am available in abundance, only a small quantity is used mainly for rice bran oil production. The rest is either used as animal feed or discarded as waste.
However, I firmly believe that I will be utilized completely once they get to knowabout my useful qualities.
Host: We are all eager to know about your qualities. Please tell us more
about them.
Rice bran: Well, I am a rich with
source of essential nutrients
such as carbohydrates,
proteins, fat, vitamins, minerals
and dietary fiber necessary to
support life.
Apart from being highly
nutritive, I am also packed
with various medicinally active
groups called “Nutraceuticals”. Host:Nutraceuticals?! What are
they?
Rice bran: Nutraceuticals are
food components that are
scientifically proven to have
health benefits and recognized
for the prevention and/or
treatment of the diseases.
The highlyactive nutraceutical groupspresent in me are called phenolics, tocopherols, tocotrienols, and γ-oryzanol. Each group

contains various bioactive molecules possessing medicinal properties.
Host: Please tell us more about the importance of bioactive molecules present within you Rice bran: bioactive molecules grant me the “Superpower”to protect people from incurable diseases. The power to provide protection against heart disease, increased blood pressure, increased cholesterol level, obesity, diabetes, and cancer, etc., and the list goes on.
But there is a hurdle in utilizing these bioactive molecules.
Host: Hurdle?
Rice bran: Yes. I will explain.
I am formed by a series of various simple sugars such as glucose, xylose, etc., firmly holding each other. The sugars are aligned to form a complex network and difficult to break. The majority of the bioactive molecules possessing higher medicinal properties
are trapped in this complex network.
Now, if you want to get the medicinal benefits, it is important to release the trapped molecules.
Host:Is there a method to release the trapped bioactive molecules?
Rice bran: Yes, there is an effective and reasonable method.
The best suitable tool for this purpose is Enzymes.
Enzymes are chemical substances which help in releasing the bioactive molecules. Using enzymes for releasing bioactive molecules is called as enzymatic
bioprocessing.
Host:Can you please explain how do enzymes free the bioactive molecules?
