Baked Sweet Potato & Thai Pesto
Healthy and delicious comfort food.
RECIPE
Ingredients
. Sweet Potatoes - 1-2
. Coriander fresh - bunch
. Lime juice - 1/2 to 1 depend on size of lemon
. Thai spice mix - tblspn
. Chilli optional in pesto & on top to serve
. Garlic - 4 cloves
. Ginger - tsp
. Peanuts crushed - 1/2-1 cup
. Olive oil - 1/4 cup - use garlic infused oil on the sweet potatoes to bake . Rock Salt - tsp
. Black Pepper - 1/2 tsp
Optional Cheese Vegan
Optional Bread Roll Vegan
Method
Boil potatoes for 15-20 mins or until nearly soft (depends on size of potato). Cut in half, put on lined baking tray. Drizzle with olive oil & salt. Bake 20-30 mins 200oC or till golden. While cooking blend all ingredients to make pesto, adjust seasoning or lemon juice to taste. Spoon pesto on potatoes, serve with sliced chilli, coriander sprig, optional cheese on top, salt & pepper. If you want the works put it in a toasted roll with melted cheese or in Spaghetti. OMG, so good! Enjoy!
