Lettuce Wrap
Avocado Lettuce Wrap with Fermented Cabbage
A fresh, light & healthy lunch. Fermented Cabbage known as Sauerkraut has nutrients important for optimal health. It improves digestion, boosts immune system, helps lose weight, reduces stress, maintains brain health, reduces risk of certain cancers, promotes heart health, lowers blood pressure and stronger bones.
RECIPE
Lettuce Wrap Recipe:- Ingredients:-
. Avocado
. Lettuce
. Tahini
. Pistachios
. Black Sesame Seeds . Lime Juice
. Rock Salt
. Black Pepper
. Coriander or Mint Fermented Cabbage:- . Cabbage
. Beetroot
. Garlic
. Ginger
. Juniper Berries
. Rock Salt
Method
In a large lettuce leave put half of an avocado, spread tahini on, then fermented Cabbage, squeeze of lime, crushed Pistachios, sesame seeds, chopped Coriander, salt & pepper.
Fermented Cabbage:-
Put chopped cabbage in a bowl, add salt, massage until softens (about 10 mins). Mix a cup of grated beets for every 5 cups of cabbage, add juniper berries, garlic & ginger. Put cabbage in container, pressing cabbage underneath liquid. (If necessary add water to ensure sufficient liquid). Cabbage should be submerged under liquid.
Use heavy object to press cabbage under liquid. Seal container. Allow sauerkraut to culture 3-10 days at room temp or until tastes to your liking. Transfer to fridge. Enjoy!
