Carrot Hummus
Za’atar Carrot Hummus on Toast. Great for Sunday Brunch. Good dose of Vitamin C.
RECIPE
Ingredients
. Carrots - 2 large
. Parsnip chips optional
. Cashew nuts - 1 cup
. Tahini - optional in hummus or spread on toast instead of vegan butter . Orange juice - 1/4 cup
. Olive oil - 3 tablespoons
. Sesame Seeds - on top
. Mint - decoration
. Ginger - 1 teaspoon
. Garlic - 3
. Rock Salt
. Black Pepper
. Carrot water if too dry
. Za’atar - tablespoon
. Bread - vegan
. Optional vegan butter
. Optional Avocado on top
Method
Optional Grill thin parsnip chips. Boil carrots until soft.
Add all hummus ingredients to blender and mix until smooth. Toast bread & either spread with vegan butter or Tahini then add hummus, add parsnips chips, sprinkle sesame & top with mint. Optional top with sliced Avocado. Enjoy!
