 Sweet Potato Chips & Guacamole
Healthy Vegan Mexican
RECIPE
Ingredients
. 1 Avocado . 1 Cocktail Tomato
. 1/4 Red Onion
. Tablespoon Coriander . 1/2 Lime Juice
. Rock Salt . Black Pepper
. Paprika
. Optional-JalapeƱo . Optional-Roasted garlic mixed in the Guacamole . Optional-Chickpeas(tin) roasted with potato
. Optional-Black beans(refried) or lentils for protein roasted w potato Optional-Vegan sour cream
. Large Sweet Potato Gold or Purple
Method
For Chips slice sweet potatoes round, thinly and cover with olive oil and rock salt then place flat on baking paper on oven tray, sprinkle over Paprika, bake for 20 mins (depending on thickness) on 200oC then turn over for another 15 mins or until crisp. In a bowl combine smashed avocado, diced tomato, chopped coriander, diced onion, lime juice, salt & pepper. Serve immediately as avocado can go brown if left out or cover with cling wrap & leave seed in until ready. Enjoy the freshness, flavour and health benefits!
