 Cherry Ripe Bites
 Sweet and healthy heaven !!!
RECIPE
Ingredients
Base
. 1 cup Dates
. 3⁄4 cup Almonds raw
. 3 tblspns Cocoa powder
. 1 tblspn melted virgin Coconut oil
. 1/2 tsp rock salt
Filling:-
. 1 1⁄2 cups raw Cashews
. 1/3 cup Maple syrup
. 1 tsp Vanilla extract
. 1⁄2 cup Coconut milk
. 1 cup Cherries (jar) & 1/2 cup fresh for middle. . 2 tblspns Lemon juice
. 2 tblspns dark chocolate 70%
. Cinnamon - tblspn
. Rock Salt - 1/2 tsp
Method
Soak cashews overnight in water in fridge or soak cashews in a bowl in 3 cups boiling water 1 hour. Drain cashews. Line oven tray with baking paper. Make crust in food processor-add dates, almonds, cocoa, coconut oil & salt. Put mixture in tray, press evenly to sides. To make filling - in a blender add cashews, maple syrup, vanilla, coconut milk, cinnamon, lemon juice, coconut, cherries, salt. If too thick to blend add a little coconut milk. Pour half of filling mixture over crust. Add 1⁄2 cup fresh cherries over filling layer. Top with remaining filling & smooth out top. Put in freezer 4 or more hours to harden. Cut into bite size squares. Decorate with melted dark chocolate (microwave 30 sec increments). Drizzle over top with a spoon. Enjoy!
