 Beetroot Hummus
 Beetroot Hummus with Avocado on Toast - seriously delicious!
RECIPE
Ingredients
. 1 tin Chickpeas
. 1 Beetroot
. 4 tablespoons Tahini . 3 Garlic cloves
. 1/2 cup Olive Oil
. 1/4 cup coriander
. Avocado
. Lemon juice
. Nigella Seeds
. Grain Vegan Bread
. Black Pepper
. Rock Salt
Method
Bring a pot to boil. Add beetroot & chickpeas simmer until cooked. In a food processor blend chickpeas, beetroot, tahini, garlic, lemon juice, coriander, salt, pepper, olive oil. Serve on Toast with slices of Avocado, a sprinkle of Nigella seeds & spring of Coriander. Enjoy!
