Herb Muffins
Savoury Muffins with Herb Butter
Perfect to mop up the sauce of Mango Curry or with Herb Butter
RECIPE
Ingredients
. Spinach (2 cups)
. Kale (1 cup)
. Coriander (1 cup)
. Lime juice - 2 tblspns
. Coconut Milk (1 cup)
. Raw sugar - 2 tblspns
. Self-Raising Flour - organic - 3 cups . Rock Salt - 1 tsp
. Bi-carb Soda - 1 tblspn
. Apple Cider Vinegar - tblspn
. 60g vegan butter softened
Method
Preheat oven 170oC. Grease muffin tray. Combine dry ingredients in bowl, knead butter in with your hands. Set aside. Blend any non-dairy milk, apple cider vinegar, lime & spinach mix until smooth. Combine mix & dough well then put equal amounts of dough into muffin tins. Bake in oven for 20 mins or until a knife inserted comes out dry. Remove from oven & cool. Serve with Herb Butter (recipe upon request). Enjoy warm out of the oven.
