 Sunshine Zoodles
 Creamy Roasted Pepper Sauce - Vegan and yum !
RECIPE
Ingredients
. Yellow Peppers . Yellow Cherry Tomatoes . Lemon Juice
. Oregano fresh or dry
. Turmeric
. Garlic
. Onion
. Olive oil
. Pistachios or Pine nuts
. Squash or white carrots
. White beans or chickpeas
. Rock Salt
. Black Pepper
Method
Make Zoodles.
Roast peppers & tomatoes, (drizzle with olive oil), oregano, optional with garlic & onion in oven on 200oC for 30 mins until skin is black (or grilling 15 mins is quicker). Peel burnt skin off when cool. Save half for the pot.
In a pot fry garlic & onion, pine nuts (or roasted), until soft, add half the beans. Blend 1/2 beans, 1/2 roasted peppers, 1/2 tomatoes, lemon juice, salt & pepper. Mix sauce into pot. Microwave zoodles (sprinkle Turmeric over) & sauce 3 mins. Serve with crushed roasted Pistachios or pine nuts & a spring of Oregano. Enjoy the nutritional benefits. Your body will love you!
