Beetroot Meatballs
Vegan and delicious!
RECIPE
Ingredients
. 2 Zucchini’s . 1 large Beetroot . 1 carrot Carrot . Basil fresh
. Parsley fresh
. 4-6 Garlic cloves . 1 cup Sundried Tomatoes . 1/4 cup Almonds
. 1 cup Walnuts
. 1 cup Cashews
. Pine Nuts . Chilli . Cayenne pepper . 1 tblspn Balsamic Vinegar . 1 tblspn Tahini
. 1 tblspn Chia seeds . 1 cup Olive Oil . Rock Salt
. Black Pepper
Method
Make zucchini zoodles. Make zoodle sauce in blender add tomatoes, almonds, chilli, vinegar, oil & salt, not too runny. Make pesto in blender add basil, garlic, cashews, oil & salt to desired taste, not too runny. Make meatballs in a bowl combine grated beetroot, grated carrot, walnuts, tahini, cayenne, garlic, parsley, chia, oil & salt, not runny! Roll into balls, squeezing out liquid to make it firm.
Place all 3 elements into a serving bowl or plate and Microwave for 3-4 minutes. Top with crushed pine nuts (mock Parmesan) & a sprig of Basil. Enjoy the nutritional health benefits. Your body will love you!
