 Mango Curry
Deliciously sweet and healthy!
RECIPE
Ingredients
. Mangoes - tin or frozen if can’t get fresh
. Sweet Potato
. Yellow onion
. Yellow Pepper
. Carrots x 2
. Baby Spinach - cup
. Lime
. Coriander
. Whole tomatoes - tin
. Tomato paste x sml tin
. Coconut cream - tin
. Chickpeas - tin
. Cashews - 100g
. Rock salt
. Pepper
. Coconut oil - tblspn
. Curry powder - tblspn
. Sweet paprika - tsp
. Cumin - tsp
. Cardamom - tsp
. Chilli powder or fresh
Optional have with basmati rice unless on a a low carb or keto diet
Method
Boil the chopped carrots and potatoes until nearly soft. Blend mango & tomatoes. In a large pot add oil, spices, onion, cashews, pepper, chickpeas, carrots, potato, cook for 15 mins then add mango sauce, curry powder, tomato puree, cream, lime, salt & pepper. Mix well then add spinach & coriander, simmer 5 mins. Make sure chickpeas are soft. Adjust sauce thickness with cornflour if too runny or too thick with water. Top with Coriander to serve. Enjoy!
