Veg & Pesto Soup
Perfect winter dinner!
RECIPE
Ingredients
. Beetroot . Sweet Potato . Butternut pumpkin
. Carrot
. Zucchini . Cherry Tomatoes . Sundried Tomatoes . Red Onion . Garlic . Pine nuts
. Olive oil
. Dried herbs eg Rosemary or fresh
Method
Cut vegetables in small to medium cubes, put on a lined baking tray, drizzle over olive oil and bake in oven on medium heat for 45-60 minutes until golden. These a great for the first night then you can have leftovers as soup. Blend with water until desired consistency. Make your own Pesto (Basil, pine nuts, garlic, lemon juice, olive oil). Optional top with croutons.
