Victoria Sandwich
USING ‘K’ BEATER First warm the ‘K’ beater and bowl
6 oz margarine thoroughly. Place sugar and butter in the
6 oz castor sugar bowl, and switch to minimum speed.

1 tbsp chocolate powder Break in the first egg and beat until the

1 tbsp instant coffee powder Add the second and third eggs, the

Reduce speed to minimum and tip in all
the sifted flour. Switch off immediately

Using the spatula, turn the mixture into
two greased 8” sandwich tins. Bake in a
moderately hot oven (375ºF) for 25
minutes approx. When cool, sandwich

ice and decorate as required
Add flavourings if desired as follows:
Essence with the butter and sugar.
Chocolate powder with the flour.
Coffee powder previously mixed with 1
dessertspoonful of boiling water, with the
butter and sugar
Orange rind with the butter and sugar.
Lemon rind with the butter and sugar.
