Although automated machinery has made the production of baked goods more efficient (a loaf of Syrian bread takes about IV2 minutes to bake in a 700-degree oven, partners Halaby and Tony Mafoud find themselves putting in quite a full week to produce the quantity of baked goods that their wholesale and retail clients require.Each day from 7 a.m. on the smell of fresh baked bread Syrian bread, some with sesame seeds, some with thyme(Zahter), emanate from the deep ovens at the back of the shop. Baskets of fresh spinach and platters of ground lamb await pocketing as pies in wraps of dough, to be eaten hot or cold. Trays of pastries including barazet (sesame cookies), knaves (walnut and pistachio nuts in shredded dough) -and ajwah (date filled cookies) and old favorites as Ladies Fingers and Baklava delight both the eye and the palate.Until one year ago, Halaby and Mafoud filled all their orders for restaurants, groceries, supermarkets and the retail shop at the plant at the back of the bakery. But growing demands required DAMASCUS BAKERY to acquire more space - on President St. - in order to bake as much bread as needed. At that location, four dough makers and four bakers, all trained by Halaby and Mafoud, turn out an incredible number of loaves of Syrian bread each day.
