Baked Provisions builds to a budget
Pie manufacturer Baked Provisions reaped big savings by involving its plant design company, Total Construction, early on in a western Sydney construction project focused on a purpose-built facility that would help it reduce costs and grow with the market.

The company sells its products to independent supermarkets and other retail outlets, and its emphasis is on using high quality fresh ingredients, and employing traditional home- style baking methods.

Construction began in June last year, and the company began manufacturing in the new plant in December after the last of the equipment had arrived.

The Sydney plant also has significant expansion capability – it currently only uses a quarter of the available space – so that it can grow with the market.
The cost-saving design features include the use of shipping containers as freezers.
“By analysing the process flows, we were able to reduce the amount of in-floor drainage required, so we didn’t have to dig up the slab,” Blythman says.
The facility is now also servicing Victoria, with fresh product shipped to Melbourne daily, according to Thai.

Baked Provisions had manufactured in Perth for several years, but a few years ago decided to expand the business into NSW, so a distribution centre was opened at Prestons to test the market and see how the products
were received.
“We use premium ingredients,
and the feedback from customers is that our pastry is among the best out there,” says managing director Trieu Thai.

Rob Blythman, Total Construction’s national business manager said with ECI in mind, a workshop was carried out with all stakeholders to identify required efficiencies, confirm proposed outputs, and flag any potential limitations.
