Tofu Stu ed Yellow Bell Peppers
Directions
Wash and scoop out the seeds of the Peppers. Place them on a baking sheet. If the peppers don’t sit upright, carefully turn them over and carefully slice the bo om to make the ledge even. Make sure you don’t cut a hole in the bo om.
Lightly chop the tofu and mix the Tamari sauce in with the tofu.
Mix the Tofu with the cooked Quinoa and Sesame oil, and ll the Peppers with the mixture. Add Salt and pepper if desired. Bake in the oven for 25 mins/half an hour un l the peppers are cooked through.

3oz/75g Firm Tofu
1 Tablespoon Tamari Sauce
4 oz/100g Cooked Quinoa, cook with a veg stock cube
4 strips Fresh Chives, chopped Salt/Pepper
