Ingredients
I Zucchini per person
8 Medium Fresh tomatoes Handful Fresh Basil Handful Fresh Oregano Handful Fresh Parsley Salt/Pepper

Zucchini Spaghe with Fresh Tomato Sauce
Directions
Place the tomatoes in a pan of boiling water and cook un l the skins just start to split. Remove and drain. Peel the skins o , remove the stalks, and place in a food processor with the S blade. Add the fresh herbs and process, add salt and pepper to taste.
Cut the ends of each zucchini.
Pass through a spiraliser.
Very lightly steam the zucchini for 3 minutes.
Many people like to eat the zucchini raw, I found
by steaming it just for 3 minutes, and hea ng the
sauce seems to bring out the avour more, you
choose whether you eat it hot or cold.
Heat the Tomato sauce if desired, pour over the
spiralised zucchini, add salt and pepper and serve. 21
