For about a decade, Vigan has facilitated longganisa celebrations each
        January which are gone to by thousands of nearby and outside guests.

        They celebrate the festival with street dancing and other activities that
        have Vigan longganisa subject.
                                                               Ingredients
                                                                    1 kilo ground pork pigue or kasim

                                                                    1/4 cup garlic crushed and
                                                                    chopped

                                                                    1 Tbsp. onions chopped
                                                                    (optional)
                                                                    1 tsp. salt up to 1 Tbsp.
                                                                    1 tsp. phosphate accord powder

                                                                    mixed with 1 Tbsp. water
                                                                    optional
                                                                    1 tsp. black pepper ground 1/3

                                                                    cup soy sauce 2 1/4 Tbsp.
                                                                    vinegar sukang Iloko or cane
    Longganisa
                                                                    vinegar
                                                                    2 yards sausage or hog casing
                                                                    1/2 cup water
                                                                    2 Tbsp. cooking oil





         This is the Recipe of
         Empanada




              1 cup glutinous rice flour                       Empanada


             (sifted)
             1/4 cup all-purpose flour


             (sifted)
             6 tbsp annatto water


             1/2 cup vegetable oil
             1 pc onion (chopped)



         The empanada is a signature food of Ilocos Norte, in specific Batac. What
         makes them all so distinctive is that it’s name, Empanada is derived from the

         Spanish word meaning to wrap and coat in bread and this is often the
         foremost popular road passage in Ilocos Norte and is among the finest

         meriendas in Ilocos Norte.
